"Coffee is an excuse to bring friends together." 11/15/19 In Istanbul, Turkey, This Coffee Is Brewed on Hot Sand Cihan Zekioğlu brews his coffee in a pan of hot sand on his cart in Istanbul, Turkey, using a technique that dates back to the Ottoman Empire. Mixing water with finely ground coffee in a small metal pot, Zekioğlu places it in the sand, which sits atop an open flame. He expertly shifts the sand around the pot to control the boil. In about 90 seconds, the espresso-like coffee is ready to be served. If there is one thing people everywhere love, it just might be coffee.
